In 2013, former wd~50 pastry chef Sam Mason opened up a cutting-edge ice cream shop in Williamsburg, and now wd~50’s big cahuna, famed modernist chef Wylie Dufresne, is opening up a donut shop nearby. Du’s Donuts and Coffee opens today adjacent the William Vale hotel, right next to where former child star Dylan Sprouse is set to launch a meadery.
According to the press release, the airy space features an open kitchen where you can watch Dufresne and head baker Colin Kull (Tartine) turn out a rotating array of cake donuts.
Last week, Grub Street got an early taste of the opening flavors. The Cinnamon Apple, made with freeze-dried Granny Smiths, “tastes like what might happen if green Jolly Ranchers grew in nature.” The Strawberries and Cream is “tangy and deeply sweet, and reminiscent of strawberry Nesquik.” We’re told other opening flavors include Creamsicle, Grapefruit Chamomile, Peanut Butter Yuzu, Pistachio Pink Lemonade, Pomegranate Tahini, and Mexican Hot Chocolate.
According to Grub, Dufresne “also wants to add cocktails a few nights a week, and loves the idea of an Old-fashioned2, which is to say an old-fashioned (doughnut) paired with an Old Fashioned (drink).” In the meantime, the orange La Marzocco is churning out coffee, espresso drinks, and cold brew from Brooklyn Roasting Company. As a nod to his native Rhode Island, Dufresne is also serving up a local specialty, coffee milk (coffee syrup and milk).
Given how Insta-ready these adorbs orbs are, you may want to do Du’s early in the day. The shop starts serving at 8am and once they’re outta donuts, they’re out.
